RECIPE

*Ingredients*

1/2 head garlic, separated and peeled

1 bunch parsley, rinsed

1/2 cup good quality olive oil

1 tsp red pepper flakes

1/2 lb dry linguine

1/2 lemon

*Method*

Heavily salt a large pot of water, and bring to a boil. Cook pasta to al dente while completing the steps below.

Slice the garlic cloves thinly, and set aside. Pick the parsley leaves from their stems, and finely chop. Add olive oil to a large sauté pan, and heat over medium flame until shimmering. Add sliced garlic, stirring constantly, until garlic is barely toasted. Add the red pepper flake and remove from heat.

Add the pasta, drained, with about 1/4 cup reserved pasta cooking water. Add lemon juice and parsley, and toss to combine. Season for salt and pepper, and serve.

So I have a story with making this that isn't a "I didn't like it, but I left out an ingredient" situation. All the ingredients were in place, but there was a toddler in the mix.

I'd made it for my cousin and her husband since they're vegetarian, and I knew it was perfect for them. But with all the mix of flavors popping around, I was concerned their one year old wouldn't be a fan. Now, my cousin and her husband loved it, and for a bit, the kiddo seemed to enjoy what his mom was sharing.

And then, the moment my cousin turned her head, he snatched a handful off her plate and ran away with it, stuffing it in his mouth.

It was my proudest cooking moment, honestly.

Just made it, I didn't have any chili flakes and so it didn't really taste much... I made this because I didn't have anything else in the fridge but some left over parsley and garlic but if I did this again properly I would probably add the chiliflakes and shrimps :)

If you want to add more to this pasta even tho i find the plain recipe satisfying i'd recommend to Add lots of fresh or dried red chilis (with the seeds!) and i like to pan fry chorizo or italian sausages and leave the fat and charred bits that happen from it in the pan for when i cook my garlic and sometimes shallots as well. then chop up the sausage and add it. Also if you add roasted garlic at the end and roasted pine nuts really adds a huge flavour. Some people love the plain recipe but i find it is just a great base for more innovative pastas. But i love the plain recipe just as much sometimes when i really nail all the ratios! I also find that rosemary while cooking the garlic instead or with the parsley is more satisfying. And sardines, anchovies and capers with lemon juice added is killer in the summer with a great dry white wine! sorry to go over the top i just love this kind of pasta haha

I'll be honest, I haven't the foggiest idea what I did wrong. I followed everything step by step and I ended up with garlic flavored olive oil soaked noodles
No real sauce to speak of, just noodles in olive oil
